Icebox Cake.

Have y'all had it? Oh my goodness, it's delicious and EASY! I first had it a few years ago in Tallahassee, FL with one of my most precious friends. Before that, I had never had anything remotely close to it.

You see, those little crispy wafers absorb that heavy whipped cream and take on the most delightful spongey consistency in a matter of hours. The only comparison I can make is Nilla wafers tucked in banana pudding.

While the ole Icebox Cake doesn't have the most attractive presentation, I can assure you the taste is out of this WORLD. And although, I did find this version a tad more appealing, I have to question whether the wafers were able to reach their full "spongey" potential without being completely covered with whipped cream.

As stated in the Washington Post, the hardest part will be finding the Nabisco Famous Chocolate Wafers. Surprisingly I found mine at the local Walmart {cookie aisle}. I know for a fact that Publix has them, at least the Tallahassee Publix stores carried them.... but not with the cookies, they're at the end of the ice cream aisle where you find other ice cream condiments {you know, cones, sprinkles, hot fudge, etc}.

Here's what you do...

First, whip 2 cups of heavy whipping cream with 1 tsp of vanilla and 2 to 3 tablespoons {or more if you like} of sugar until stiff. I've found heavy cream to whip better in a cold stainless steel bowl {so stick your bowl in the freezer for a few minutes beforehand} and if you have a big Kitchenaid mixer you oughta put her to work on this one.
Second, be sure to let your children lick the beaters.
Third, spread whipped cream evenly between wafers to form a long "log" of black wafers and white whipped cream.
Fourth, spread whipped cream all around the outside of your "log".
Fifth, sprinkle with shaved chocolate
Refrigerate overnight or for at least several hours. The longer it sits really the better it gets {kinda like those Nilla wafers in banana pudding}.

Slice, serve, and watch out... it's dangerously delicious!!

In the picture above I used one box of cookies to make 2 cakes... 1 box will make a really good size Icebox Cake {you could even put 2 rows side by side and cover the entire thing with whipped cream... it would certainly be easier to store in the frige that way. A half a box will easily serve 4-6 and the entire box will easily serve 8-12. To be safe... I whipped 3 cups of heavy whipping cream... having extra homemade whipped cream around never hurt anyone, did it?

You absolutely crack me up. I can't think of a more perfect, low-maintenance dessert.

I don't know if this particular product exists in the Pacific NW. If it's not made with free trade cocoa and organic sugar, the stores don't carry it.

my husband is on the stupid south beach diet so i guess julianna and i will have to eat the whole things ourselves! oh well.. that shouldn't be a problem! :)

We used to have this as dessert at our sorority house in college--only we called it Zebra cake. It was absolutely everyone's favorite! Thanks for sharing the recipe!

Sounds yummy - I'm such a fan of homemade whipped cream - we even sub it for milk on our cereal at my house sometimes - it helps add calories to Wilson's diet and mine (not that I need any)! And from what I can see of Paige's hair - it is too cute!

I pretty much have to have dessert every night, so you know I'll be trying out this one. I absolutely LOVE whipping cream. One of the best things ever. I hope my Publix carries those wafers!

And I love Paige's new hair cut. Cute and sassy!

hey darby, i actually just made this on saturday. we call it a "the log" up here. you can also use ana's lemon wafers if you don't want chocolate...it's so yummy. i'm goint to atlanta next week and we're having a girls night one night and i'm making this dessert.

I could not find your Nabisco choc wafer cookie however, I used a Swedish import choc mint wafer though smaller-- i thought I would compensate with a pepperidge farm choc macadamia nut cookie -- well the layers worked well, saved a few for decoration --they are scalloped so we added it as a tree lichen yes how botanical Broke it in half to add as if it were growing out of a log and crumbed up the pepperide farm cookie as a faux bark and well it was a christmas Yule log of sorts!! did not use all the pepperidge fam cookies in this cake but maybe it would work as a cake too??
